True Ceylon cinnamon is the dried bark of the perennial tree Cinnamomum zeylanicum and is indigenous to Sri Lanka. Cassia cinnamon is similar in some ways but very different in other ways. Ceylon cinnamon is highly prized, lighter in colour, has ultra-low coumarin levels and a milder, more nuanced flavour. Cassia is much cheaper, has higher coumarin levels and more robust, spicy flavour.
